Full Description: CHOCOLATE WEDDING CAKES
Shards
Layers of crisp, light shards of chocolate encasing sublime mud cakes. Works beautifully in dark or white chocolate. The shards can be broken up and served on each slice, often with a raspberry coulis or a swirl of cream.
The cake can be stylish with ribbon adornment or can be finished with silk flowers or foliage to suit your own individual requirements.
Shards with Tumbling Roses
A stunning design for sumptuous weddings or engagements. One, two, three, or four tiers adorned with shards and ribbons with delicious chocolate roses cascading down one side.
For a small additional charge, a combination of different colours of chocolate can be used, to keep all of your guests happy or to create a truly dramatic effect!
WHITE vs DARK
White chocolate is creamy in colour, looks more like a traditional cake and is sweeter than dark chocolate. However it has a lower melting temperature so is less suitable for midsummer outside weddings. Dark chocolate cakes make a big impact, are dramatic and tend to be the choice for true chocoholics.
FONDANT ICED WEDDING CAKES
As each cake is made to order, any design can be adapted to match or co-ordinate with your colours/themes. Whatever decorations you would like can usually be added; traditional sugar flowers, favourite sweets, hand made characters of yourselves as bride and groom.
You could just leave the cake plain, as a modern, simple design or perhaps ask your florist to arrange fresh flowers as adornment. Fresh flowers do have associated risks though such as the risk of sap leaching, unknown pesticide sprays and the difficulty of keeping them fresh without water droplets damaging the icing on the cake!
PRACTICALITIES
Chocolate wedding cakes do not usually need refrigeration unless the temperatures hit the top 20’s. They are best stored in a cool room or air-conditioned room out of direct sunlight. Do not place directly under an air conditioning unit though. Mud cakes last for up to two weeks and leftovers can be frozen, in the unlikely event that any is left over!
If the cake is coated in ganache (fresh cream whipped with melted chocolate) the cake should be refrigerated, prior to being displayed at the venue, due to health and safety issues.
Fondant iced cakes should not be refrigerated. They simply need to be kept dry so are an ideal worry free choice for hot weather.
The tiers in our cakes are supported with dowelling rods so the cake will not collapse, however you should ensure that the cake is placed on a level table.
SIZE
A three-tier cake serves around 80-100 guests as a dessert and around 150 guests coffee size. Cakes can be made to suit any number of guests by adjusting the size or the number of tiers, or by adding a ‘kitchen’ cake. A kitchen cake is simply an extra ‘undecorated’ cake which is cut in the kitchen to give additional pieces.
